Founded in 1984 by Gilbert Gruet, the winery utilizes the traditional Méthode Champenoise, taking advantage of Southwestern New Mexico’s high-elevation, sandy loam soils, and drastic diurnal temperature shifts to grow ideal grapes. A non-vintage blend typically consisting of 75% Chardonnay and 25% Pinot Noir, it is aged on the lees to develop a rich complexity and an ultra-fine mousse.
